We are building PAPAVER for you.

Papaver is a place, in the heart of Hoeilaart, which gives a new meaning to conviviality and gastronomy, dedicated to returning to earth, to simple pleasures.

We are building PAPAVER for you. Work will be starting soon and Papaver is scheduled to open in summer 2024!

A convergence of three passionate enthusiasts

Papaver is the result of three enthusiasts, Robin, Stéphanie and Yann, converging around a genuine desire to change “things”.

They chose gourmet cuisine, good sourdough bread baked on site, a ceramic workshop and a meeting place around music as vectors of change.

PAPAVER, WHY?

We want to create a community.

The idea is simple: we combine, under the same roof, gourmet cuisine with good bread and the best croissant, all in a vibrant atmosphere… And having a positive impact on society and the planet.

Through Papaver, we want to think and act differently, undertake business in a sustainable and long-term way, dream big, combine experiences, make things happen, eat better, consume locally, and have a positive impact on society and the environment.

Through Papaver, we want to inspire entrepreneurs, workers, supporters, investors… to take the step: join us in this adventure and follow our ambition.

Through you and with you, we want to create a community that eats, moves, dances, appreciates, lives, comes together, asks for more… around the same values. In short, the community that defines Papaver.

STÉPHANIE SCHRAMME

J’ai 34 ans, j’habite à Bruxelles et je tire mes origines de Belgique, du Brésil et d’Italie.

Passionnée de voyages, de photographie, de squash, de randonnée, de musique, de concerts, de théâtre, de lecture, de livres d’art et de cuisine.

J’ai des souvenirs d’enfance très marqués de cuisine simple mais qui rassemble : la tarte aux cerises de ma grand-mère et son porto qu’elle amenait chaque dimanche, les pasteis, chouchous et beignets de ma maman, les crêpes du dimanche soir, le fondant au chocolat et les spaghettis bolo avec les cousins, le marchand de glace qui passait dans la rue, les tartes réalisées avec les fruits du verger. 

Autant d’émotions que je rêve de retransmettre et de voir perpétuer via Papaver.

YANN VERSTRAETEN

Moi c’est Yann. J’ai 37 ans, suis marié et père de 2 adorables petites filles, Hélène et Anna, qui grandissent à Hoeilaart et que je trimballe partout à vélo. Amoureux de nature (formé Guide Nature au CNB), d’aventures et vrai gourmand, je me suis passionné pour le pain il y a dix ans au détour d’une rencontre avec un ami resté fidèle depuis. Je me suis formé professionnellement au métier de boulanger. J’adore les textures et milles arômes du pain, et surtout de pouvoir le partager avec mon entourage. Il n’y a pas une semaine où un bon pain au levain ne sort du four chez nous. J’ai toujours voulu œuvrer dans mon métier à rendre notre économie plus résiliente et respectueuse de la nature. Le projet d’un lieu qui renforce nos liens sociaux autour des plaisirs de la vie avec un réel impact sur l’environnement a mûri depuis longtemps dans mon esprit. Quelle joie de pouvoir enfin le réaliser avec une si chouette équipe et là où je vis!

ROBIN CLAESSENS

Je suis un fervent défenseur du principe selon lequel il est toujours possible de faire mieux, ne serait-ce qu’un peu.

Mon parcours est intrigant : naissance et enfance au Congo, fin du cycle scolaire et études universitaires en Belgique, échange universitaire à Medellin, Colombie, carrière en banque, finances et investissements a Londres, retour en Belgique après 20 ans au Royaume Uni afin d’être proche de ceux que j’aime.

J’ai géré une chocolaterie et suis membre du conseil d’administration d’un moulin.

Ma fille Thelma, 17 ans, est mon coach en matière d’Instagram et de Tik Tok.

Ces expériences et une vie quelque peu nomade, ont contribué à façonner la personne que je suis : motard, voyageur, ultra sportif, un amour combatif pour la nature et sa protection, un sens viscéral de la famille, une passion pour la musique (sans compétence en tant qu’instrumentiste), je suis hyper exigeant et parfois enclin à la tyrannie – Mobutu est mon surnom ;o).

Je me lance dans le projet Papaver convaincu que nous devons faire mieux. Mon objectif est de le démontrer : entreprendre, engager, gérer, cuisiner, manger, interagir… mieux. Et faire du peanut butter ;o).

STÉPHANIE SCHRAMME

I’m 34, live in Brussels and have roots in Belgium, Brazil and Italy.

I love travelling, photography, squash, hiking, music, concerts, theatre, reading, art books and cooking.

I have vivid childhood memories of traditional cooking bringing people together: my grandmother’s cherry pie and the port she brought with her every Sunday, my mum’s pasteis de nata, chouchous and fritters, Sunday evening crêpes, chocolate fondant and spaghetti bolo with my cousins, the ice cream man who passed by in the street, tarts made with fruit from the orchard.

So many emotions that I dream of transmitting and perpetuating via Papaver.

YANN VERSTRAETEN

My name is Yann. I’m 37, married and the father of 2 adorable little girls, Hélène and Anna, who are growing up in Hoeilaart and whom I take everywhere by bicycle. A lover of nature and a real gourmet, I became passionate about bread ten years ago when I met a friend who has remained faithful ever since. I love the textures and many flavours of bread, and above all I love being able to share it with those around me. I’ve always wanted to make our economy more resilient and respectful of nature. The idea of a place that strengthens our social ties around the pleasures of life with a real impact on the environment has been growing in my mind for a long time. What a joy to finally be able to make it happen with such a great team and where I live!

ROBIN CLAESSENS

I’m a firm believer in always doing better, if only a little.

My background is intriguing: born and raised in the Congo, I finished school and university in Belgium, with an university exchange in Medellin, Colombia, a career in banking, finance and investments in London, and my return to Belgium after 20 years in the UK to be close to those I love.

I have managed a chocolate factory and am a board member of a mill.

My daughter Thelma, 17, is my Instagram and Tik Tok coach.

These experiences and a somewhat nomadic life have helped to shape the person I am: a biker, a traveller, an ultra-sporty person, a fighting love of nature and its protection, a visceral sense of family, a passion for music (with no skills as an instrumentalist), I’m hyper-demanding and sometimes prone to tyranny – Mobutu is my nickname ;o).

I’m embarking on the Papaver project convinced that we need to do better. My aim is to show that we can: undertake, hire, manage, cook, eat, interact… better. And make peanut butter ;o).
